Apple Surprise Pancakes – FRESH. OUT.

These Apple Surprise Pancakes are light, fluffy, and moist thanks to apple sauce in the batter. Topped with baked cinnamon apples, they’re the perfect lazy Sunday breakfast. Grain-free and paleo compliant, too!

Light and fluffy apple surprise pancakes with baked cinnamon apples. Grain-free, sugar-free, gluten-free and paleo compliant. 

  • 1 small-medium apple
  • Half a lemon
  • 1 tbsp Swerve Brown Sweetener, packed
  • 1/8 tsp vanilla extract
  • 1/8 tsp ground cinnamon 
  • 4 large eggs, divided and at room temperature
  • 1/2 cup almond flour, packed
  • 1/3 cup tapioca flour or arrowroot flour, packed
  • 1/4 cup coconut flour, packed
  • 1/4 cup plain, unsweetened almond milk at room temperature
  • 2 tbsp unsweetened apple sauce
  • 1 tbsp Swerve Brown Sweetener, packed
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Generous pinch of ground cinnamon
  • Ghee to coat pan or griddle
  1. Line a rimmed baking sheet with parchment paper and set aside. Place oven rack at center position and preheat oven to 350 degrees F. 
  2. Peel, core and very thinly slice the apple into rounds (we used a gala apple and a mandolin slicer). Rub both sides of each apple slice with the cut lemon to prevent browning. Stack the slices and set aside.
  3. In a shallow bowl, combine the juice from the lemon, Swerve, vanilla and cinnamon. Dip the apple slices in the mixture to coat both sides and transfer to the prepared pan. 
  4. Bake apples for 20-25 minutes, or until they begin to soften. 
  1. While the apples are cooking, add flours, salt, baking soda, and cinnamon to a large mixing bowl and whisk to combine thoroughly. 
  2. Separate eggs and beat egg whites until peaks begin to form. Set aside, and in a separate bowl, combine almond milk, apple sauce, Swerve, vanilla, vinegar and egg yolks.
  3. Heat a pan or griddle over medium-low heat and coat with ghee or oil of your choice. 
  4. Add the wet mixture to the dry mixture and whisk to combine, then fold in egg whites with a rubber spatula. 
  5. Spoon the batter onto the pan to form 4-inch pancakes (the batter will be pretty thick). Cook 2-3 minutes each side or until golden brown. Adjust temperature as necessary.

Serve immediately, topped with baked apples or toppings of your choice or cool and freeze until ready to use. Warm frozen pancakes in microwave or toaster.
