Air Popped “Nooch” Corn – Fresh. Out.
Yes, we know corn is a grain. This amazing air popped popcorn is the one occasional grain cheat we allow, and it’s worth it.
This recipe makes a ton of popcorn, perfect for a party or to keep for several days of snacking (like it’s gonna last that long). If you lack self-control like us, halve the measurements.
Using oil to make the popcorn itself is a waste. Microwave or electric air poppers are healthier and more efficient, and this microwave air popper is one of our favorite kitchen things.

Air popped popcorn that’s never greasy and is loaded with herbs and spices.

- 2 tbsp nutritional yeast
- 1 tbsp dried basil (not ground)
- 1 tbsp dried thyme (not ground)
- 1 tsp garlic powder
- 1/2 tsp salt (or skip it)
- EVOO in a spray bottle (Don’t fall for the marketing hype or buy aerosol spray oil. You can use ANY spray bottle, so buy a cheap one and stick it to the man.)
- 1/2 – 2/3 cup regular popcorn kernels, depending on popper
- One ginormous bowl
- Add the salt, spices and nutritional yeast (“nooch”) to a small bowl and combine. DO NOT use ground spices in the above measurements. If you want to break down the spices, use a spice grinder or bullet mixer to combine the ingredients (we like it like that). Maybe make an extra batch just to keep on hand. Set beside your ginormous bowl and EVOO spray bottle.
- You’ll pop the popcorn kernels in two batches. Pop and dump the first batch into the ginormous bowl, spritz quickly with EVOO and sprinkle with 1/4 of the seasoning mix. Toss with a couple of big spoons, lightly spritz, and sprinkle with another 1/4 of the seasoning mix. Using a little at a time allows you to control the amount of seasoning. Taste in between sprinkles. We call this “quality control”.
- Transfer to serving bowl or to airtight containers for quick snacks all week long (yeah, right). Repeat with the second popcorn batch.
