Apple Cinnamon Mug Cake – Fresh. Out.

  1. Add the dry ingredients to a large microwave-safe mug and stir to combine completely. 
  2. In a separate mug or bowl, add the egg whites, applesauce and vanilla and beat together thoroughly. 
  3. Add the wet mixture to the dry mixture and mix until smooth, scraping the bottom and sides of the mug frequently. Once completely mixed, let sit for one minute.
  4. While the batter is resting, combine a tablespoon of powdered Swerve and 3/4 teaspoon of almond milk in a mug and stir immediately to combine and work out any lumps. Set aside.
  5. Microwave the batter, uncovered for 1 minute and 45 seconds. Once cooked, run a knife around the edge of the cake, carefully flip to release the cake and place on a plate, right side up. Let sit one minute, then drizzle with the Swerve icing and enjoy.
