Apple Cinnamon Mug Cake – Fresh. Out.
- Add the dry ingredients to a large microwave-safe mug and stir to combine completely.
- In a separate mug or bowl, add the egg whites, applesauce and vanilla and beat together thoroughly.
- Add the wet mixture to the dry mixture and mix until smooth, scraping the bottom and sides of the mug frequently. Once completely mixed, let sit for one minute.
- While the batter is resting, combine a tablespoon of powdered Swerve and 3/4 teaspoon of almond milk in a mug and stir immediately to combine and work out any lumps. Set aside.
- Microwave the batter, uncovered for 1 minute and 45 seconds. Once cooked, run a knife around the edge of the cake, carefully flip to release the cake and place on a plate, right side up. Let sit one minute, then drizzle with the Swerve icing and enjoy.
