Dairy-Free Peppermint Mocha – Fresh. Out.

‘Tis the season for peppermint mochas! Ah, those warm, minty mugs of deliciousness that just to happen to be terrible for us. No problem. We’ve got a Dairy-Free Peppermint Mocha that satisfies without the sugary syrup and lab-grown chocolate flavoring. It’s also low in carbs, vegan, sugar-free, gluten-free, and paleo-compliant.

Dairy-Free Peppermint Mocha

  1. Heat almond milk in a small saucepan over low heat, stirring frequently with a wire whisk.
  2. Once the almond milk is hot, whisk in the Lakanto Drinking Chocolate, coconut milk powder, and Lakanto Powdered Sweetener. Continue whisking until thoroughly combined and smooth. 
  3. Add the peppermint extract and whisk until fully combined. Remove from heat.
  4. Divide the coffee and mocha mixture between 2-3 mugs (depending on size). Top with whipped coconut cream if desired and serve immediately. 

Mocha mixture yields a little over 2/3 cup. For peppermint mocha on demand, cool mocha mixture completely, then transfer to a glass airtight container or small mason jar. Shake well before adding to coffee. Refrigerate up to a week.
