Healthy KFC Coleslaw Copycat – FRESH. OUT. Healthy KFC Coleslaw Copycat – FRESH. OUT.
- 1 14-ounce bag coleslaw mix
- 1/2 cup Oikos Pro plain Greek yogurt
- 2 tbsp Hellman’s Vegan Mayo
- 3 tbsp Lakanto Classic Sweetener
- 1 tbsp lemon juice
- 2 tsp to 1 tbsp white vinegar*
- 1/4 tsp Kosher salt
- 1/4 ground black pepper
- 1/4 tsp onion powder
- Add coleslaw mix (we get ours at Aldi) to a large mixing bowl.
- Add remaining ingredients to a small mixing bowl and stir with a silicone spatula until combined. Pour over slaw mix and toss with a fork to coat evenly.
- Cover and refrigerate for 20-30 minutes, then toss and serve.
- Refrigerate in an airtight container for up to four days, tossing before serving. If you like maximum crunch and are making this for a smaller crowd, refrigerate the slaw mix and dressing separately and simply dress the slaw before serving.
- * Less vinegar = sweeter, more vinegar = tangier.
